Cook Islands Recipes

Raro Tarati Salad – with or without Corned Beef

Cucumber, tomato, lettuce, onion, garlic, spring onion (scallion), radish, capsicum, coconut cream, can of corned beef.

Clean and slice salad vegetables into serving bowl. Toss greens. Distribute corned beef in the salad and pour coconut cream over. Place in chiller till ready to use. Serve with rice or any root vegetable.

Substitute the corned beef with cooked chunky pieces of tuna, crabmeat, lobster, prawns, ham, pork etc
