Cook Islands Recipes

Traditional pawpaw salad

One underripe pawpaw sliced julienne
Lettuce leaves (or watercrss) sliced into ribbons
Red onion sliced in rings
Sprig of mint, bruised and tossed with other ingredients

Pawpaw seeds dressing

1 Tablespoon pawpaw seeds
1 Cup oil
½ Cup vinegar or lemon juice
1 Tablespoon finely chopped onion
1 Tablespoon sugar or honey
½ Teaspoon dry mustard or chilli

Blend well till smooth and creamy. Serve with salad or any seafood dish.
